- Here's the ingredients I use for Salsa. Unfortunatley, I couldn't tell you the
- exact quantities, because I just throw it all in. Suffice it to say that the
- main bulk of the sauce is tomatoes and red chillies; all the other ingredients
- should be added in quantities according to your taste. The secret is to very
- finely chop everything without making too smooth a sauce.

- INGREDIENTS:
- Very ripe tomatoes,
- Very finely chopped hot red chilli peppers,
- Very finely chopped onion,
- Very finely chopped fresh coriander herb,
- Ditto Oregano,
- Ground Cumin,
- Olive Oil (just a couple of tbsp)
- Seasoning to taste

- METHOD:

- Soak the tomatoes in boiling water for a couple of minutes. This should make
- it easy to remove the skins (you can deseed the tomatoes, but I can never be
- bothered).

- Chop the skinned tomatoes as finely as possible and mix with all of the other
- ingredients.
